Being indoors during this lockdown and not being able to eat out has been tough. I am constantly craving for different food and have no choice but to cook them at home. But now that I am making this at home, I try to make it healthier. So when I was craving for some donuts, I made these Baked Whole Wheat Donuts.

Since they were already super healthy, I didn’t mind indulging with the toppings and made two of my favorite flavors:

  1. Lemon coconut glaze with pistachio
  2. Dulce de leche with chopped almonds

Dulce De Leche is a Brazilian flavor that is just cooked or caramelized condensed milk which turns into a lovely toffee flavor. But trust me it’s heavenly and there’s nothing like it in the world. Okay, I might be slightly biased.

INGREDIENTS:   

For the Donuts –
  1. Whole wheat flour – 1 cup
  2. Dry Active Yeast – 1.5 teaspoon
  3. Milk – ¼ cup
  4. Brown sugar – 4-5 tablespoons
  5. Butter – 1/3 cup
  6. Salt – a pinch
For the Lemon Coconut Glaze –
  1. Lemon juice – 1-2 tablespoons
  2. Coconut powder – 2 tablespoons
  3. Lemon zest – 1 lemon
  4. Sugar – 2 tablespoons
  5. Heavy cream – ¼ cup
  6. Pistachios – a few
For the Dulce De Leche –
  1. Condensed milk – 1 can (you will need about ¼ of it)
  2. Almonds – a few

 

UTENSILS/EQUIPMENT:

  1. OTG
  2. Cookie-cutter
  3. Baking Tray
  4. Pressure Cooker
  5. Butter Paper

RECIPE:

For the Donuts –
  1. Warm some milk, make sure it’s lukewarm.
  2. Mix 4-5 tablespoons of sugar in it.
  3. Add a little over a teaspoon of yeast to the mix and let it rest for 10-12 minutes.
  4. The yeast would have activated by now and made a nice bubbly froth.
  5. Mix this yeast mix to a cup of whole wheat froth. Mix nicely.
  6. Add a little melted butter and well and make a nice soft dough.
  7. Initially, the dough would be very sticky but keep kneading it and it will get less sticky and become soft.
  8. The dough should be smoother than the dough we use to make Rotis. If the dough seems stiff, then add a little more milk. If it’s too sticky, add a little dry flour.
  9. Cover this dough with a wet kitchen towel for an hour to prove. The dough would have doubled up by then.

10. Now roll this dough into a flatbread of about ½ inch thickness.
11. Take a cookie cutter and make a circle. Take a smaller cutter and make a hole in between.
12. Keep butter paper on a baking tray and place the donuts on it.
13. Cover the dough for another 20-30 minutes.
14. Preheat an OTG at 180 degrees Celsius and place the baking tray in it.
15. Cook the donuts for about 18-20 minutes until they get golden brown and cook completely.
16. Repeat again if you have more batches.

For the Lemon coconut glaze –
  1. Once the donuts have baked, add heavy cream in a pan and warm it. Add sugar and mix it well.
  2. Remove from heat and add the juice of half a lemon and add the zest of one lemon.
  3. Take some coconut powder in a flat bowl.
  4. Now take the completely cooled donuts and dip them in the lemon glaze to cover one side of the donut.
  5. Sprinkle some coconut powder on them or place the donut from the glaze side on the powder so that it sticks nicely.
  6. Garnish with some pistachios.
For the Dulce De Leche –
  1. Take an unopened condensed milk tin and place it in a pressure cooker full of water.
  2. Make sure that the water level is at least a few inches about the can.
  3. Pressure cook on high heat until you hear a whistle, then let it simmer on low heat for another 10-12 minutes.
  4. Cooldown completely before opening. Dulce de Leche is ready.
  5. Cover one side of the donuts with it, you might need a knife to spread it.
  6. Sprinkle some crushed almonds on top.

Serve your guilt-free baked whole wheat donuts warm to enjoy the maximum. Also, if you have made, warm them slightly before serving.
