Tofu scramble is a great vegan option which is full of protein and imparts all the protein-y goodness one needs in their diet. This recipe literally takes about 5-7 minutes to cook and is my go-to dish every time I am getting late in the morning.

INGREDIENTS: 

  1. Tofu – 250gms
  2. Onion – 1, small
  3. Carrot – 1, small
  4. Beans – 5-7
  5. Capsicum – ¼
  6. Green chilli – 1
  7. Coriander leaves – few sprigs
  8. Cumin seeds – 1 teaspoon
  9. Turmeric Powder – ½ teaspoon
  10. Oil – 1 tablespoon
  11. Lemon juice – ½ lemon
  12. Salt – to taste

RECIPE:

  1. Finely dice the carrot, beans, capsicum and onion.
  2. Take a non-stick pan and add a little oil.
  3. Add some cumin seeds and allow them to crackle. Add the onions next and allow them to brown for 2-3 minutes.
  4. Add the other veggies, chilli and add salt and mix well.
  5. Let the veggies cook thoroughly for 3-4 minutes.
  6. Add turmeric powder and mix well.
  7. Grate the tofu and add it to the pan.
  8. Squeeze juice of half a lemon and top it up with coriander leaves.
  9. Serve hot.
